P2 Eat Smart Fabulous Fusilli Mediterranean Pasta

 High Protein Low Carb Mediterranean Pasta

Cook time for pasta:

Low Carb P2 Eat Smart Fabulous Fusilli pasta 8-12 minutes
High Protein P2 Eat Smart Fabulous Fusilli pasta 6-8 minutes

1 package P2 Eat Smart pasta, cooked until al dente, drained
1 lb ground chicken
2 cloves garlic minced
¼ cup dices shallots
½ cup sun-dried tomatoes, packed
½ cup dry white wine
¼ tsp red pepper flakes
1 tbsp Italian flat-leaf parsley
Grated parmesan cheese (to taste)
Kosher salt (to taste)
Freshly ground black pepper (to taste)
2 tbsp olive oil
1 cup feta cheese (8 oz)
½ cup diced olives
Salt (1 tsp/liter of water for cooking pasta)

Recipe Instructions:

  1. Begin cooking pasta in well salted water. 

  2. Mince garlic and shallots and  saute in olive oil. 

  3. Finely chop the parsley leaves and slice the
    sun-dried tomatoes into slivers

  4. Remove garlic and shallots from pan and fry
    ground chicken (season with salt and pepper to taste)

  5. Add garlic, shallots and sun-dried tomatoes to cooked ground chicken 

  6. Add white wine and simmer till half the wine is reduced

  7. Add cooked pasta to mix (amount of pasta based on
    personal preference)

  8. Add ¼ cup grated parmesan and cook for 2 minutes
    on low/medium heat

  9. Take off heat and add crumbled feta and olives,
    stir lightly

  10. Sprinkle with parsley and red pepper flakes

  11. Taste for seasoning and serve immediately
    with grated parmesan cheese and a drizzle
    of extra-virgin olive oil, if desired.
